The village itself is best explored on foot or on a tuk-tuk tour, since the old cobbled lanes are steep and uneven. After a classic visit in the vineyard, winery and cellar where vintages dating back to are stored, you learn the art of blending Cabernet and Merlot wines to find the perfect blend for your palette.
The food at the aptly named La Terrasse Rouge is excellent and the 3-course menu available at both lunch and dinner is good value. Begin the afternoon by heading underground to discover the massive 12th century church several stories beneath the surface. Even my mom, who is often claustrophobic, loved the underground visit. The church is a massive single vault that will quite literally make your jaw drop. This is the most lovely of the gates to the fortified town because of the way the vines dangle down it like a curtain and the way the arched gate perfectly frames the bell tower of the Monolithic Church.
The cloister is monolithic, meaning cut from a single stone. They occupied the cloister for four centuries, before abandoning it during the French Revolution in when the Cordeliers order was banned. It sat with the ivy taking over nearly every inch of the crumbling walls until the 19th century, when it was purchased and the owner had the foresight to utilize the 3 kilometers of underground tunnels to age sparkling wines in the Champagne method.
The wines age and ferment in riddling racks in the dark tunnels. Taste the sparkling wines of Les Cordeliers while exploring the cloister and gardens. Sauternes is made up of five small villages all situated quite close to one another. For the truly adventurous, try their treetop tasting in which the traditional visit concludes with a return to carefree childhood days climbing trees. Boeuf de Bazas is a Gascon specialty served at La Chapelle. The restaurant is housed in the former chapel of the estate, which lends the restaurant its name.
The menu is renowned for showcasing products from the Nouvelle Aquitaine region, particularly the meats like Bazas beef or the roasted chickens that come from Maison Peyriguet.

The sweet wine is the most expensive of any Bordeaux appellation, because of the amount of manual work that needs to be done in order to produce a bottle of Sauternes. Not all the bunches of grapes are ready to be harvested at the same time and botrytis-affected grapes might be harvested in many harvests from early fall through winter. There's a fabulous passage about how the male winemaker's wine often reflects the temperament and demeanor of his wife. Even twenty years ago, he bemoans how winemakers feel obligated to respond to the fads of the wine market rather than staying true to what works for their land, vines, and all that is naturally available to them. Each chapter of the book features a different growing region in France, and Lynch does well to help convey the weather, terrain, cultural differences, and people in every place.
A great read for those who like to read about wine and wouldn't mind a little French socio-geography lesson in the meantime. This book is from the late 80s so some of the info in it is probably outdated, but that doesn't take away from how delightful this is to read. This was such a good book and it didn't hit you over the head with tons of wine terminology etc.
If you are into wine and into France or even if you are just into France or just into wine, this book is a fun read. I enjoyed it a lot. I also must add that I had the pleasure of drinking one the wines that he imported the other day at dinner. I ordered it not knowing he was the importer and when I looked at the back of the wine, there was his name, what a pleasant surprise, and it was a really great bottle of wine.
So there's that too.

When he tells about drinking a Vouvray from the 40s, my mouth watered.
When he tells about his first meeting with the Bruniers, I thought of the several bottles of Vieux Telegraphe I've been lucky enough to have drunk, and the wine grew even richer in my memory. However, even if you are not a seasoned wino, the many annecdotes I don't think I would have enjoyed this book nearly as much were I not already quite familiar with the wines and wine regions of France, and the wine industry in general.
